Why is the bottom of my air fryer food soggy?

Steaks, chicken and fish come out of the air fryer golden on top and pale, damp and stuck-on underneath. The hot air blasts down from above, but the bottom sits flat on the plate, trapping steam and juice. Most people flip halfway and still get one soggy side. The fix in the book costs one flat steel skewer, needs no tools beyond your hands and a table edge, and wipes clean in seconds.

Common questions

Why is the bottom of my air fryer food soggy?

The heater and fan sit above the food, so the top gets the strongest hot air. The underside lies flat on the plate, where steam and juice collect and can't escape, so it steams instead of browning.

Does flipping food halfway fix a soggy bottom?

It helps, but each side still spends half the cooking time lying in its own steam. Food crisps evenly when hot air can reach the underside the whole time, which means lifting it off the base.

Is it safe to put metal in the air fryer?

Plain stainless steel is fine in most basket air fryers: racks, skewers and cutlery. Avoid painted, coated or plastic-handled items, and keep everything well clear of the heating element. Check your manual first.
